The Hospitality and Catering - Food Safety, Hygiene, Health and Safety Standard (the Standard) against which a business is audited is consistent with requirements specified in national and international food safety and hygiene standards.
In addition, the Standard:
- Includes ‘Best Practice’ elements for how to go above and beyond legal requirements, should you wish to.
- Contains enhanced safety in relation to ‘front of house’ work practices, often not part of an FSMS for a kitchen.
- Contains up-to-date allergen management processes, including Natasha’s Law.
- Encompasses food standards and labelling, usually enforced by Trading Standards in England and Wales, to fully support safe food if provided packaged.
The Standard and audit set that underpins the Scheme has been independently assessed and rigorously aligned to the latest food safety and hygiene and allergens regulations. Both have been approved by the Safe to Trade® Technical Standards Committee and have Assured Advice from Milton Keynes Primary Authority.
If your business is enrolled on Safe to Trade® they will have been emailed access to the Standard.
Individual locations don’t need a copy of the Standard to prepare for their audit, instead they should use the Safe to Trade Operator Guide.
